What an amazingly beautiful day it has been yesterday and the city was full of locals, students, tourists, and shopaholics alike soaking up the sun and roaming the streets of Freiburg, filling them like ants. We were right in the middle of it and completely lost track of time until our stomachs started growling to let us know a lunch was way overdue. It was lunch madness and almost every place around the Bermuda Dreieck (= Bermuda Triangle; a corner area in Freiburg) was packed with customers and some fast food joints even had queues oozing out their doors. Thankfully I had done my homework so we didn’t have to go on another hangry food quest and just around the corner, nestled between a garage something and another restaurant, Burger Chalet awaited us. As the name tells it’s a popular little burger joint and luckily the queue was sort of short and two lovely ladies allowed us to join them at their table for one of the rare options to sit outside enjoying the sun today.

Burger of the Month: Himmel & Ääd Burger (Heaven & Earth)

Beforehand I had made plans to get my grub on with that ‘Alpenfeuer’ (Fire of the Alps) burger that comes with a chili-cheese-sauce, firy jalapeños and a homemade chili powder. Well, plans are great, but then life happens and as so often I did let another menu special item distract me and lead me off my  destined path. Without even thinking I heard myself ordering a medium grilled burger of the month, the ‘Himmel & Ääd’ (Heaven & Earth). Himmel & Ääd or Himmel & Erde is a popular and regional german dish, which is mostly common in the Rhineland, Westphalia, and Lower Saxony. In it’s purest version it consists of blood pudding, mashed potatoes, fried onions and apple sauce and actually so did this burger. Together with that juicy beef patty and wedged between two appropriately sized and perfectly toasted buns this just worked. All these very different textures and flavors merged together wonderfully and created something new and delicious. My favorite, besides the remarkable standard items of the burger, was the thin slice of tangy blood pudding, that added a spicy, almost creamy component on top of the patty. The tart and sweet apple chutney gave some fruity notes and the onions, being sweetish as well convinced with a light smokiness. The only thing that didn’t do too much for the whole concept and the flavor palette was the mashed potatoes, and frankly, it made it all just a bit more difficult to eat. I do get it though, it completes the transition of the traditional plated dish to a hands-on inventive burger. Fries were good.

Additionally to the fact that they know how to cook their stuff it’s worthy to mention that they are sourcing most of their ingredients locally, aren’t using any additives, the meat is freshly ground every day and they are making all their sauces themselves and from scratch as well. A lot of craft and thought goes into every burger here and the entire menu is also available with an in-house made vegetable patty for the vegetarians out there. The shop is small and cozily set up for a quick meal in a relaxing atmosphere, however, the glass barrier in front of the grill can’t save you entirely from all the food smell, so don’t mind taking a bit of burger scent home with you. The staff seems to enjoy themselves, is friendly and the guy  behind the counter was particularly fun to chat to. I was super full and happily content when we left and already have the next visit scheduled in my head. This time hopefully trying my original choice of burger and those fabulous looking rosemary potatoes. Thanks for the great grub.

Bacon Cheeseburger & Crinkle Cut Fries

One of the things I had to do whilst in New York was finally hitting Shake Shack. We arrived after the big lunch crowd so the queue wasn’t too bad and it took us just 15 minutes to reach the front and another 10 minutes for them to get our orders out. I must have mixed up something when placing my order as we did get the burgers without the lettuce, tomatoes and all. Just plain bacon cheeseburgers and unfortunately, I realized it a little too late to change it back.

It was a decent tasty burger, nicely sized and grilled. The buns were proper, didn’t dampen the flavours and overall held their part of the deal. The meat, however tasty, was a bit underseasoned for my liking. I know they take special pride in the natural flavours of their beef, but I just wished for a pinch of extra salt and maybe some pepper. The cheese was nice and tart and the bacon added some very welcome saltiness but could’ve been crunchier. Because of the missing freshness of the vegetables, this felt a bit greasy so I’ll have to make sure to order all the works next time. Reading this back actually doesn’t sound too flattering but I still really liked that burger, it just wasn’t what I had expected. The famous crinkle cut fries were good too but actually could’ve used a bit of salt as well.

I like their whole sourcing approach and how they try keeping things as natural and healthy as it is possible  when it comes to burgers and fries. Also, this branch must be fabulous to get out for a relaxing lunch if you’re working in the area as Madison Square Park provides enough shade and a relaxing atmosphere to get a nice break in between your day. One of the nicest fast food joints I have been too.

Dude, Where’s my Marrow?

imageWow, my friend was really super hungry so everything had to be decided rather quickly and be at best around the corner. From the places I had lined up close by most weren’t open so we head over to Jalan Besar to check out ‘Suprette’ in the basement of the Kam Leng Hotel I had read about. We were greeted warmly by the staff and the interior seemed nice and cosy, something similar to a small bistro.

My friend had the ‘Suprette Burger‘ and I ordered the ‘Hanger Steak & Marrow‘ which was the actual reason I had this place on my radar in the first place. When it came to the table it looked pretty tasty, all meaty with a mountain of golden fries. The hanger steak was brilliant, even though cooked slightly over medium and somewhat coldish, it had this rich beef flavor, more rustic and was completely lean which was totally my thing. The fries on the contraty were like hot sticks, crispy and so perfectly salted that I didn’t touch the salt shaker even once for the whole dinner. One thing I missed though was the bone marrow which I thought to remember from pictures of other blogs. I wasn’t quite sure so I asked the staff if it maybe was incorporated into the sauce or something which I didn’t really get a proper answer to and the sauce surely was creamy and delicious but nothing about it really reminded me of buttery marrow. After i had finished up my meal another gentlemen approached us and told me politely that I would now get a two dollars rebate as normally this dish was including half a grilled bone of marrow which they ran out of about a week ago. Usually I would have said something but I wasn’t really in the moment then and actually was quite puzzled realizing I just ate a multilated dish and only was told about it afterwards. Not cool man.

At last ‘Suprette’ really is a nice place close to home with some wicked free flow fries and great steak but honestly, this situation could have been handled so much better. I think it’s ridiculous to hold a grudge over something tiny like half a missing bone so when I’ll eventually get over this tragedy in my life I will return here to finally try a flawless and completely intact hanger steak and this time I just buy myself an extra portion of marrow for the two dollars that I saved tonight.

Diner/Bistro Concept at Pacific Plaza

imageA friend told me about this place at Pacific Plaza which is a fusion of ‘L’Entrecote‘, the steak & fries place from Duxton and a modern burger joint with the concept created by Michelin Star Chef Bruno Menard. Half of the shop looks very similar to the french bistro using the same tablecloth and all and the other half looks like a modern style diner with an open concept directly in the mall.

I ordered the ‘Lamb Burger‘  with ‘Truffle Fries‘. When the burger arrived it looked a bit small at first but turned out to be very sufficient and filling. Squeezing the burger into manageable size only very little juice dripped out which could have been a sign for very dry or very well hung meat, thankfully it was the latter. The meat actually was nice and chunky and still juicy inside, maybe a bit too soft for me but well seasoned and meaty in taste nevertheless. The bun was spiked with black sesame seeds, was soft enough but held up pretty good all the way. I was really looking forward to the combination of the mint sauce and the fresh cilantro which I absolutely love but they unfortunately were only hints in the total   mix of flavors. In comparison to that the caramelized raisins and onions came out much stronger and dominant.

The ‘Truffle Fries‘ were nice and crispy with a slight touch of truffle oil which didn’t come out too strong either but there was hardly any salt on them. This might have been just a personal preference of  mine and was solved quickly by the friendly waiter bringing me a salt grinder.

image‘&Made’ is a nice casual place with very friendly staff and most important decent burgers. However I will ask them for a double slap of mint and cilantro in case I should come back here next time which I’m not too sure about as it’s also not the cheapest of places with twenty five dollars ish a burger++. For steak & fries I probably stick with the Duxton branch as the atmosphere is just more bristro and less mall like.

Just Steak!

imageL’Entrecote on Duxton Hill is a french bistro style restaurant that makes it easy for those who can never decide what to order, like me. As main you can have steak, steak or steak, with fries to be exact. So when I feel like something meaty this is the place that I’m drawn to most often.

Having only one main on the menu made them become pretty damn good at it. The meat comes usually in two servings – one bigger, one smaller – and is cooked perfectly according to your preference. Entrecote is a premium cut from the rib area and at L’Entrecote they cover it with their special creamy mustard sauce which enhances but doesn’t overpower the meat. The fries are thinly cut and crisp and will be refilled as long as you ask for more and together with a small walnut salad all this comes for under 30 dollars ++.

imageAs starters we had the ‘Bone Marrow‘ which comes as one big split and grilled beef bone together with rock salt and toasted bread. It’s buttery texture and taste make this  such a sinful dish but I can’t get around it when I’m there.

imageAs a second starter we ordered the ‘Sardines in a Tin‘. As the name suggests they are served in an opened tin where the sardines lie in high quality vegetable oil. Spread on a piece of baguette, sprinkled with rock salt and drizzled with some lemon juice this creates a great combination of flavors with the sardines as the headliner.

Their house red is a semi dry Bordeaux which is not too heavy and goes along just fine with the food and can also be purchased for takeout.

Come early or prepare to wait as they don’t take reservations and it gets very busy in the evenings. ‘Steak & Fries‘ in perfection.
