BBQ Bacon Burger

Okay, so I am actually gonna take up writing again. The great thing is I have a lot of material to practice on as I still took loads of pictures during my year off, made notes about almost every mentionable meal and also have collected a big library of audio reviews, that I’ll try to transfer piece by piece onto digital paper. So don’t be surprised if there are some backdated reviews popping up in between. This one’s a rather recent one and a place I wanted to try for a while now. derfreiBurger was one of the places leading the rise of burger joints (the newer ones are mainly food trucks) in Freiburg and is located conveniently in a side street along Schwarzwald City. It’s a pretty tiny place with only few seating options; some bar kinda seating, a big shared table or if you’re lucky enough a little booth area for 4-5 people. It’s like a little fast food restaurant, where someone put some extra effort in, giving it a bit of a more homely feel.

Against my instincts, I went for the BBQ-Bacon-Burger (EUR5.80), that comes with a fried onion ring and loads of bbq sauce. When it flew out the open kitchen my first impression was, that there’s something off with that patty to bun ratio. Don’t get me wrong the meat is definitely big enough for that price, it just gets a little lost in that huge roll, which doesn’t do it actual justice. They get the freshly baked buns from a local bakery and use only fresh, well-seasoned beef for their burgers and you can actually taste that extra bit of craftsmanship. I also enjoyed that sweet and crispy onion ring very much and absolutely loved their homemade smokey bbq sauce. That last one was important because there was loads of it, like close to sloppy joe’s kinda loads (so you better like it saucy). For me, the bacon strips could’ve used a couple more seconds on the flat pan to crisp up but were nice and salty anyway. Pretty good.

So the place is tiny but also not meant for you to spend hours in it, the people working behind the counter are genuinely nice and the food is mostly homemade, pretty tasty and for that very very reasonably priced. So to sum things up, I maybe would have wished for a thicker and juicier patty in general but in that price range this is a great burger overall and I’ll probably come back and check out some other menu items, like that Chilli-Cheese-Dog that caught my eye. It’s Chanterelle Season

imageAfter a lovely weekend with my family I drove up to Frankfurt for a meeting the next day. There was an Italian restaurant on the other side of the road so to keep my evening hassle free I just made my way over there and sat down outside in this beautiful weather. At the beginning I was one of two tables but before I finished my dinner the place was packed.

They had a special menu with a lot of seasonal dishes under which some came with chanterelles as the main ingredient. As I didn’t have those for a few years now I started off with a ‘Salat mit Pfifferlingen‘ (salad with chanterelles) which came as a big plate full of fresh greens, drizzled with a balsamic reduction and covered with nicely salty parmesan shavings. I loved the warm center of pan fried chanterelles, bacon and onions but there was too much oil on it that made me feel a little greasy towards the end.

imageTo stick to the theme I made the ‘Tagliatelle mit Pfifferlingen‘ (tagliatelle pasta with chanterelles) my main. The dish was light and tasted awesome and my fear it would be as oily as the salad didn’t come true. The handmade pasta had a distinct eggy flavor and was on the spot al dente, covered with a thin creamy layer of oil and juices. The chanterelles tasted great and wonderful mushroomy, not like the stuff I’m used to from the supermarket in Singapore. Some cracked black pepper over all of that and I left smiling into my Sunday evening.

Great food, friendly staff, lovely ristorante in a quiet part of town. Nice.

Closeness ≠ Goodness

imageWhere to go when you don’t have much time? Close! That’s right, and that’s exactly what friend’s and I thought yesterday and made our way to ‘Pigsfly Kitchen & Bar’ at Goldhill Plaza.

Not really feeling like anything else I ordered ‘The Pervert‘ from the ‘Burger Office’, pretty much their bacon cheese burger. I didn’t hold my hopes up too high as I had their burgers before and wasn’t too impressed. I asked for a spicy sauce when ordering but this request got lost somewhere in the process which wasn’t too bad as the standard bbq sauce is quite tasty and sweet. The toppings in general were okay, the veggies were fresh with a bite, the extra grilled onions were nicely soft and the bacon had a good salty taste but definitely could’ve been way crispier. The bun was soft and too sweet but the biggest letdown really was the beef patty. Even though much firmer than the last time, it actually was pretty lame, under seasoned and tasted like nothing much. The peppered fries were alright but nothing to rave about either.

It seemed to have become quite a popular place in the meantime but if I should come back here then only for the Thai stall which has some pretty tasty dishes to offer. Sorry ‘Burger Office’ just not my thing.

Porky Pork with Porkish Pork

imageAfter a nice sunny day at the beach we were craving some juicy burgers from and made a little detour ‘De Burg’ in Bukit Merah before heading home. Business was already going well which pushed the waiting time up to thirty minutes but being in Asia for some time now I don’t really mind waiting if it’s for some great grub.

I ordered the ‘Singhjector‘ which was next in line of my to try burgers even that it was quite difficult for me not to have their fantastic ‘Choco Lamb‘ burger again. The ‘Singhjector‘ truly was pork galore with a super juicy and well seasoned pork patty, some wonderful crispy and salty Canadian bacon and Iberico chorizo which I couldn’t really work out from all the other ingredients. The smoky cheese and the sweet bbq sauce gave it all a nice finish and the only thing I missed was maybe a little bit of lettuce. At the same time my friend had ordered a ‘Pork Knuckle‘ from neighboring ‘Stew Küche‘ – from which I took some crackling and slipped it into my burger. The birth of the ‘Singhjector – Heart Attack Edition‘.

If you like pork, this is your burger; juicy, salty goodness with great quality ingredients. It didn’t really need any modifications but when I saw my three pork ingredients burger next to the pork knuckle it just came naturally. Thanks again for keeping up a constant high level of quality burgers. Still the best on the island I reckon.

Truffle Shuffle!

imageMy two new friends’ that I got to know through my family had there final night in Singapore tonight so I went down to their hotel at Robertson Quay to have one last dinner with them. We walked around for a bit screening for something tempting to sit down. So we passed the Japanese BBQ branch of ‘Aburiya’ and quickly agreed that this was the one.

We started up our meal with the ‘Horenso Salad‘ which is put together from spinach leaves, Japanese cucumber, roasted garlic, lemon juice and crispy bacon bits. How great was that, nice and sour with crunchy textures in between from the bacon and garlic. The first meat that arrived together with the ‘Stuffed Shitake Mushrooms‘ was ‘Jo Rosu T.Shio‘, beef loin to be dipped in truffle salt. This was amazing. The meat was super tender, very lean but therefore less strong in taste but powdered with crazy salt it won another couple of notches in taste.

imageWe continued with ‘Wagyu Jo Karubi Tare‘ – short rib marinated in a special soya sauce mix. This was my absolute favorite of the evening as the marinade was delicious and due to the nicely marbled fat in this cut the beef just melted in my mouth. We ordered another round of this as well as an extra portion of the truffle salt from before which made it even more delicious. The final dish was ‘Tigerprawns in Hot Miso‘ marinade. The prawns were big and obviously watered properly as they were completely clean without cutting them up. They stayed nicely juicy on the fire and the marinade was mildly tangy, not hot though which was a bit of a bummer.

‘Aburiya’ is another proof that simplicity paired with high quality ingredient is a fantastic combination looking for perfection. Of course these kinda places are not for everyday dining but here you have the choice between many different meats, cuts and prices and so we ended up paying roughly 50$ per head excluding drinks which I regard reasonable for great stuff.

Burgasm In A Box!

imageIt was the last day in the office for one of my colleagues and since we always wanted but never managed to all go together to ‘De Burg’ one other colleague who actually had a day off kindly went and got us all a nice takeout lunch. I often told my colleagues about this place and how nice their burgers are so everybody had pretty high expectations which is why I was a bit concerned as I never tried to takeaway.

We all ordered the same classic 200gr ‘Bacon Cheese Burger‘ with ‘Tater Tots‘. I knew the burgers are good but I was surprised how good they still were after a 30 minute car ride. The beef, which they ground themselves was perfectly medium well, still juicy and with a natural and strong beef taste too it. One of my favorite bits was the bacon which was nice and salty and super crispy, not too much, just right. BACON! The bun was fluffy and held up properly not making eating this huge burger a huge mess and even the ‘Tater Tots‘ were still crunchy and potaolicious.

I’m not sure how they did it but even takeaway this is still my favorite burger in town after trying loads and loads. I hope my motorbike needs servicing again soon so I can come back to Bukit Merah to finally try their ‘Choco Lamb Burger‘. Burgasm approaching.
